Grumpy Kat's Breakfast Burritos for a Crowd

1 cup heavy cream
1 - 15 oz container whole milk ricotta
18 jumbo eggs
1 package McCormick Original Taco Seasoning Mix
2 sticks butter
3 envelopes Velveeta Toppers - Original
1.5 lbs bacon, cut into 1/2" pieces
1 lb pork sausage (I like Jimmy Dean)
1 lb ham, diced
1.5 cups diced onions
1.5 cups diced bell pepper
4 cloves garlic
1 box cherry tomatoes, cut into eighths
3 jalapenos, very finely diced
1.5 cups green onions
1.5 cups cilantro
8 oz sharp cheddar, grated
8 oz monterrey jack, grated
8 oz colby jack, grated
50-60 low carb tortillas

Instructions:

  1. Mix cream, ricotta, eggs and taco seasoning. Melt butter and scramble eggs until ~ 50% set. You may need to cook in multiple batches - it took me four. Remove from heat and mix in Velveta cheese packets. Let fully cool.
  2. Put ham in large bowl. Render bacon in a pot until crisp. Remove from heat and remove bacon from fat - keep approximately 2 TBs bacon drippings. Add bacon to bowl. Cook and crumble sausage. Add to bowl.
  3. Add bacon fat back to pot. Add onions, bell pepper and garlic. Cook low and slow until transluced. Remove from heat and add to meat bowl.
  4. After everything is cool, add remaining vegetables, cheeses, and eggs to bowl. Mix very, VERY well.
  5. Fill burritos (I used a small ice cream scoop as two scoops per tortilla). Wrap in foil, put in baggies and freeze.

 

 

Lidia's Southern Style Chili

Ingredients:
1 LB of lean ground beef
1/2 of a medium bell pepper (chopped)
1/2 of a medium white or yellow onion (chopped)
1 can stewed tomatoes (or 2 large tomatoes from your garden boiled, peeled and chopped)
1 can of tomato sauce
2 Cans of Hot Chili Beans (Or medium if your a wuss)
2 Tablespoons Chili Powder
2 cups of cooked spaghetti noodles
Salt and Pepper to your taste

Instructions:

  1. Brown Ground beef with onions and peppers in large skillet; Drain grease
  2. Place ground beef, onions and peppers in a large pot.
  3. Add everything else except the noodles
  4. In a separate pot, boil noodles (I don't like to put raw noodles in the chili to cook). Drain the noodles then place the noodles in your chili pot.
  5. Simmer for an hour or so. The longer the better. Left overs are always better the second day.
  6. -top with cheese or add hotdogs- this is a family favorite!
